The Baker / Breakfast cook provides leadership for the night shift and ensures that the baked good requirements for site are met and to standards as per contractual commitments. Successful candidates must be able to prepare a variety of baked products, and be responsible in handling the morning food production for our clients daily breakfast service. Preference will be given to candidates that can bake from scratch. All successful candidates must be safety focused and willing to meet all client and Torch safety practices when in the field.
Job Duties:
- Daily participation in site safety requirements and meetings
- Maintain personal hygiene & uniform cleanliness and requirements throughout shift as per standards
- Daily meet with Chef to discuss production requirements and strategy of baked items
- Oversee, participate in and be responsible for the handling, preparation, production and timely service in accordance with the methods and standards approved by the Chef and as per HACCP guidelines. These include breakfast pastries (muffins, cinnamon buns, etc), lunch box pastries (cookies, squares, loafs, etc) and main meal desserts (cakes, puddings, pies, jellos, etc)
- Prepare for and serve breakfast choices as per contractual commitments (incl. scrambled eggs, omelets, pancakes, French toast, hot cereals, breakfast meat choices & potato varietals, etc).
- Batch cooking required to ensure freshness & made to order off the grill
- Defrost stock for upcoming production requirements according to approved to HACCP methods and safety procedures.
- Unload, store and rotate stock according to HACCP and company approved methods.
- Oversee, direct and be responsible for all night kitchen support staff involved in meeting the operational requirements (breakfast, sandwiches, etc)
- Store and use leftover foods according to HACCP and company approved methods, ensure product is labelled.
- Ensure kitchen and work areas (bake shop, including storage area) are clean and sanitized at all times.
- Ensure that the dining room is ready for morning service and all items are filled as required.
- Ensure that food spoilage and waste are kept to a minimum.
- Ensure that prepared and stored foods are kept at appropriate temperatures
- Assist with the production and the loading and organization of the rig box as directed by your supervisor
- Assisting with unloading/loading of weekly grocery truck deliveries
- Assisting with set up/tear down of camp
- Assist with weekly/monthly inventories as directed/required
- Wear required uniform and PPE: approved kitchen shirt and pants, slip resistant footwear (listed as non-slip or slip & oil resistant on shoe), hair net &/or headwear (beanie)
- Any other duties as assigned by site supervisor
Education and Experience:
- Journeyman Certification or equivalent designation
- High School diploma or equivalent
- Literate in the English language with reading and writing competency
- Remote Camp experience of 3 years in equivalent role
- Awareness & ability to operate all industrial kitchen equipment (incl. grills, ovens, fryers, mixers, etc)
